Director of Food & Beverage

Duties include:
Responsible for short and long term planning and the management of the Food & Beverage operations in the front and back of the house
Develop and recommend the budget, marketing plans and objectives and manages within those approved plans
Participate in total hotel management as a member of the Hotel Executive Team
Implement and maintain F&B sales/marketing programs
Direct and oversee development of employees
Hire, train, empower, coach and counsel, performance and salary reviews
Direct the implementation of the payroll, reports, forecasts, inventory and budget for Food & Beverage operations
Coordinate Food & Beverage operations with other hotel departments to ensure efficient guest service
Resolve customer complaints as appropriate to maintain a high level of customer satisfaction and quality
Implement procedures to increase guest and associate satisfaction at all times
Exercise quality control for both Food and Beverage
Maintain Argonaut/Noble House standards of service and ensure their implementation
Perform daily walk-throughs to ensure full compliance with Department of Health regulations and Corporate standards
Maintain communications with Corporate Staff
Coach and counsel employees to reflect Argonaut Hotel/Noble House service standards and procedures

Plan and direct the Food & Beverage functions to meet daily needs of the operations.
Clearly describe, assign and delegate responsibility and authority for the operation of the various Food & Beverage departments such as room service, restaurants and banquets.
Develop, implement and monitor schedules for the operation of restaurant and bar to achieve a profitable result.
Participates with the Executive Chef and Restaurant Managers in the creation of attractive merchandising menus designed to attract a predetermined customer market.
Implement effective controls for food, beverage and labor costs among all departments.
Assist Food & Beverage managers in establishing and achieving predetermined profit objectives and desired standards of quality food, service, cleanliness, merchandising and promotion
Regularly review and evaluate the degree of customer acceptance of the individual restaurants, lounges, banquet service and room service to recommend to management new operating and marketing policies whenever declining or constant sales imply dissatisfaction by the customers, a material product change in the make-up or the customer market, or a change in competitive environment.
Develop with the aid of other department heads the operating tools necessary for proper and effective budgeting, forecasting, purchasing, recipes, portion specifications, menu abstracts, food production controls, and job descriptions.
Continuously evaluate the performance and encourage improvement of the personnel in the Food & Beverage department. Plan and administer a training and development program within the department which will provide well trained employees at all levels and permit advancement for those persons qualified and interested in career development.
Provide assistance and instruction to employees and make routine hiring decisions.
Communicate daily with other management, and department heads and employees to ensure proper operating procedures are in compliance.
Must be able to work all shifts.
Participate in developing annual Food & Beverage budgets and periodic forecasts for the hotel.
Remain current on business trends and local activities.
Prepare and explain Financial Reports.
Assist in conducting the departmental operational audits and in developing corrective action plans.
Support hotel's training needs and efforts.
Monitor Guest Scores on product improvement and investigates guest complaints as related to Food & Beverage
Responsible for following instructions and performing work as assigned by immediate supervisor.
Requirements:
Demonstrated ability to effectively interact with people of diverse socioeconomic, cultural, disability, and ethnic backgrounds
6 years or more of progressive hotel Food & Beverage experience
Service oriented style with professional presentations skills
At least 5 years' experience in a senior role in a Food & Beverage environment
Proven leadership skills
Hotel/Hospitality degree an asset
Must possess the following strengths: high energy, entrepreneurial spirit, motivational leader, proven track record in high volume concept, effective communicator, effective in providing exceptional customer service and ability to improve the bottom line
Clear concise written and verbal communication skills in English
Must be proficient in Microsoft Word and Excel
Must have excellent organizational, interpersonal and administrative skills
